Spicy Stuff
I make several hot sauces each year, using almost all ingredients right from our garden. I strive to make something hot, but also full of flavour. I like mixing in different ingredients, using smoke, or fermenting the sauces.
I also dehydrate peppers each year, and then can use them later. Finding uses for what would often be waste is also fun. One example is taking the leftover spicy salty brine from fermenting a hot sauce, and using that when baking bread. It makes for an unexpected, yet pleasing, surprise.
